One of my favorite summer Go-to meals is sauteed veggies with polenta.

Polenta with Veggies

I like this meal because it is quick, but also a little different than my other meals. I can mix and match any veggies. I usually have an onion, a leafy green (today is kale, but I have used collards or spinach), and some chopped garlic (tonight I chopped a garlic scape). I then add any veggies I have in the fridge or garden. Today, I added bell pepper and asparagus. Sometimes I add mushrooms, frying peppers, broccoli, cauliflower, zucchini, brussels sprouts…whatever I am in the mood for. As for the polenta, I often use the Trader Joe’s polenta that is shelf stable…mostly because I don’t like to cook much in the hotter weather. I’ve also found polenta at Walmart in the pasta section. I just slice it and then warm up my circles in the pan until soft. You could cook some cornmeal…and put into a can to shape, cool…then slice up the next day. Or just eat the warm cornmeal mush in a bowl and top with veggies…I have done that before.

I start with my hardest veggies…adding them to the heated pan as I chop them. I water sautee them, but sometimes I add a little olive oil, if I have a lot of more tough veggies that need a longer cook time. I end with my greens. I add those just before taking them off the heat…giving enough time to wilt them and not burn them. I add a little salt to taste as I cook them. You could use your favorite seasonings, too.

No complicated recipe. Prep takes about 5 minutes and it cooks for maybe 10 minutes, depending on how well you like your veggies cooked.
